Creole-Style Turkey

The Creoles are the descendents of indigenous Native American Indians, and those that settled in New Orleans from France, Spain, and England as well as those who had no choice, Africans in the 1700s.

From this, a rich culinary and cultural heritage developed, which is different from any other part of the US, which represents a shared history. They have their own blends of seasonings, known as Creole seasoning, adding a distinct touch to their cuisine.

Our "Road Show" host, Karema Akifah Saleh demonstrates in this video how to prepare a 3-minute turkey, and then leave it in the oven for 6–8 hours!

Pay attention, as like most home cookers, cooking comes naturally, and details like quantity are by-the-by!

 







Ingredients

>> Turkey
>> Giblets
>>  Celery (chopped)
>> Flour
>> Cooking oil
>> Garlic (chopped finely)
>> Green peppers (chopped)
>> Ginger (optional, chopped finely)
>> Basil
>> Pecan nuts
>> Creole seasoning
>> Butter
>> Salt and pepper to taste


Method



>> Mix the bell peppers (sweet peppers), onions, and garlic together.

>> For the roux (sauce base), add 3 tablespoons of flour to cooking oil in the frying pan, and stir over medium heat until it turns golden brown.

>> Use the giblets to make gravy.

>> Add the sauce from the giblets to the roux.


>> Make a Basil pesos sauce with chopped pecan nuts.

>> For the stuffing, add the garlic, onions, and peppers to the basil sauce (and ginger, which is optional).

>> Put the stuffing under the skin of the Turkey, which helps to seal in the flavors.

>> Season it to taste.


>> Then grease the skin of the Turkey with butter.


>> Wrap the Turkey in foil.


>> Cook in the oven for 6 -8 hours at 200 F (93 Celsius Degree)

 

 

Creole seasonings add a distinct taste, here is one seasoning made as follows:

>> 2 tablespoons of onion powder
>> 2 tablespoons of garlic powder
>> 2 tablespoons of dried oregano
>> 2 tablespoons of dried basil
>> 1 tablespoon of dried thyme
>> 1 tablespoon of black pepper
>> 1 tablespoon of white pepper
>> 1 tablespoon of cayenne pepper
>> 5 tablespoons of paprika
>> 3 tablespoons of salt

Mix all the above, and store the rest in a container.
