Jamaican Papaya Salad

Papaya is one of the most commonly found fruits within the islands of the Caribbean, and it is used both as a fruit and as a vegetable, depending on when it is picked and cooked. As this Ramadan falls on the tail-end of summer, what could be more refreshing to have with your iftar than a papaya salad. Easy to digest and rich with vitamins A, C, and calcium and low in calories, there is no kinder way to reactivate your digestive juices.
Ingredients
- 1 cup of watercress
- 2 cups of peeled and seeded papaya (thinly sliced)
- 1/4 cup of avocado (thinly sliced)
- 1 cup of canned hearts of palm (drained and sliced)
- 1 cup of tomato (thinly sliced)
- 2 tablespoons of lime juice
- 2 tablespoons chopped coriander leaves
- 1/4 teaspoon of salt
- 1/8 teaspoon of ground coriander
- 1/8 teaspoon of allspice
Method
- Arrange watercress plates.
- Layer slices of papaya, avocado, hearts of palm, and tomato on top.
Stir together lime juice, coriander leaves, salt, coriander, and allspice.
- Drizzle over papaya salads.
